Strawberry Spinach Salad
1 bag spinach
10 strawberries - sliced (Delicious served with other berries too)
1/2 C toasted slivered almonds
2 chicken breasts -- grilled, cooled & thinly sliced
THinly sliced red onion (optional)
Lemon Vinaigrette
1/2 C Canola Oil
1/4 C white wine vinegar
2 lemons -- zested and juiced
1/4-1/3 C sugar (Do it to your desired sweetness)
1 TBSP poppy seeds
pinch of salt
Combine the salad ingredients with the dressing just before serving.
