1 ¼ - 1 ½ lbs. sweet Italian sausage, casings removed
1 ½ - 2 lbs. ground beef
2 - 3 tab. olive oil
1 large onion, diced – about 1 ¾ cups
4 cloves garlic, minced
*1 tsp. dried basil
*1 tsp. dried oregano
*2 cans (28 oz.) crushed tomatoes in puree
*1/2 cup tomato paste
1 small can of sliced mushrooms or ½ pound of fresh
1/8 tsp. salt
1 lb. ziti or penne pasta
1 cont. (15 oz.) ricotta cheese
1 cup grated Parmesan cheese
2 eggs, slightly beaten
8 oz. mozzarella cheese, shredded, about 2 cups
*You can substitute this with your favorite store brought Marinara sauce and add additional spices, if desired.
Saute onion and garlic in olive oil. Add ground beef; brown. Add the tomato sauce and spices to ground beef. Simmer 20 - 30 minutes. When the sauce has completed simmering, set aside 4 cups. In a pot over medium-high heat cook sausage, breaking up with spoon, until almost cooked through, 3-5 minutes. With slotted spoon remove sausage; set aside. Meanwhile, in a large pot of boiling water, salted water cook pasta until almost cooked through, about 8 minutes; drain and set aside. Preheat oven to 350 degrees. Lightly coat a 13” x 9” baking dish with cooking spray (Pam). In a large bowl combine ricotta, Parmesan and eggs. Stir in ziti, reserved sausage and remaining sauce. Pour mixture into baking dish; spread, on top, the reserved 4 cups of sauce. Refrigerate until ready to bake. Cover with foil; bake until heated through, about 1 hour to 1 hour 15 minutes. Remove from oven; remove foil. Position oven rack 4” from heat source; adjust oven temperature to the broiler setting. Sprinkle casserole with mozzarella. Broil until cheese is melted and bubbly, about 2 minutes.
