Roasted Potatoes

4 medium potatoes
1 sm onion chopped
14/ tsp salt
2 T olive oil
2 tsp dried rosemary (or 2 T fresh)
1/8 tsp pepper

Heat oven to 450*.  Grease jelly roll pan.  Cut potatoes into 1" chunks.  Mix onion, oil, rosemary, salt, and pepper in a large bowl.  Add potatoes and toss until coated.  Spread potatoes on apn, insinlge layer.  Baked uncovered for 20-25 minutes turning occasionally until potatoes are light and brown and tender.

For a similar roasted potatoes, but less work, just use a Lipton Onion seasoning packet or a Ranch seasoning packet...or no seasoning at all except a little salt and olive oilt.  Yum!
