Pesto


Pesto:

 2 C loosely packed fresh basil leaves

 1/3 C pine nuts

2 cloves garlic, peeled

1/2 grated parmesan cheese

Process in a food processor until rough paste.

With motor running, slowly pour around 1/2 C olive oil, extra virgin, until the consistency you like.  Add salt and pepper to taste.  Can be frozen.

It will retain the color better if you use 1 T fresh lemon juice in step 1.

If you have a high power blender, you can put all ingredients in and blend on high
