Oatmeal Mix
1 ½ cups butter
2 cups all-purpose flour
2 cups rolled oats
1 ½ cup packed brown sugar
1 teaspoon baking soda
½ teaspoon salt

14 oz. individually wrapped caramels
3 Tablespoons milk
1-2 cup semisweet chocolate chips
Preheat oven to 350 degrees. Peel plastic wrapper from caramels and place them in a saucepan or microwave-safe bowl.
Melt the margarine and combine with flour, oats, brown sugar, baking soda and salt. (The best tasting way is as the recipe reads, but the “real” recipe is a little healthier with only half the oatmeal mix—3/4 cup butter, 1 cup flour….)
Press slightly more than half of the oatmeal mix into a greased 11x7 inch pan. Sprinkle the chocolate chips on top of the mix. (Feel free to use more than 1 cup of chips…I use enough so it is evenly covered with only a little oatmeal showing.)
Add milk to caramels and melt them. (I use the microwave and it takes about 2-4 minutes, checking every 30 seconds to prevent burning and to stir it.) Once it is in a smooth liquidy consistency, pour over the chocolate chips. Sprinkle the remaining oat mixture on top.
Bake for 20 minutes. Cool. Cut into bars.
