Bran Muffins

2 Cups All Bran
2 Cups Boiling Water
3 Cups Sugar
1 Cup margarine
1 t salt
1 quart buttermilk (4 C = 1 qt. sub 1 T vinegar + 1 C milk for buttermilk)
4 eggs
5 t soda
5 C flour (can use all white, all wheat, or half of each)
4 C Bran Flakes

Pour water over All Bran in separate bowl and let sit. Cream sugar and margarine.
Add all other ingredients except All Bran Mix. Add All Bran, stir until moist. Bake in
400 degree ove18 to 20 minutes in greased muffin tin. Add raisins or dates. Can kept 3 to
4 weeks. Good frozen after baked. Good to let set 1 hour before baking.
